ε-Polylysine is metabolite of white streptomycete. ε-Polylysine has significant inhibition on both Gram positive bacteria and negative bacteria, fungi, viruses, etc., it also has good effects on the inhibitory of Gram-negative bacteria Escherichia coli and Salmonella which is difficult to inhibit by other preservatives. It also inhibits heat resistant Bacillus and some viruses with high inhibitory efficiency. ε-Polylysine is a kind of direct chain polymer of lysine and can be decomposed into lysine in human body, it can be digested and absorbed completely by the body without any side effects, it also can be used as a source of lysine , it is a kind of natural, efficient and safe food preservative.
【Product feature】:
It can effectively inhibit Gram-positive bacteria, Gram-negative bacteria, molds and yeasts, etc.;
It can extend food shelf life;
It has good thermal stability and does not decompose at high temperatures (120 º C, 20min), it can be used before and after heat treatment;

【Application】:
ε-Polylysine was approved by FDA as safe food preservative in Oct 2003. it has been widely used in food preservation. In food applications, ε-polylysine is often used in conjunction with other materials, such as alcohol, organic acids, esters and so on. It can be used in preservation of rice, cakes, pasta, sauce, beverage, wine, meat, canned food, etc.
